This creamy potato leek soup  is a cozy, healthy, protein-packed twist on a classic comfort food.

Step1

Trim the roots and dark green tops from the leeks. Slice them in half lengthwise and rinse thoroughly to remove any dirt. Thinly slice the leeks and onion. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the leeks and onion, and cook for about 5 minutes, stirring often, until soft.

Add the chopped potatoes to the pot. Pour in 4 cups vegetable broth and season with thyme, salt, and pepper. Bring to a simmer and cook for 15–20 minutes, until the potatoes are tender.

Step3

Remove the pot from heat. Stir in ½ cup skyr. Use an immersion blender to blend until smooth and creamy, or blend in batches using a regular blender. Serve hot, garnished with extra skyr, black pepper, and fresh chives.
