This lemon orzo with zucchini is a light, creamy, and flavorful one-pan meal

Step1

Heat 2 tablespoons olive oil in a large pan. Add 1 chopped small onion with a pinch of salt and cook 2–3 minutes. Add 2 garlic cloves, 2 chopped zucchini, and ½ teaspoon salt. Cook for 2 more minutes.

Add 1 cup orzo pasta and stir for 1 minute. Pour in 2½ cups vegetable broth. Bring to a boil, then simmer 6–8 minutes, stirring now and then, until the orzo is soft.

Step3

Stir in 1 cup frozen peas, 3 cups spinach, lemon zest, and 1–2 tablespoons lemon juice. Cook for 1 minute until the spinach wilts. Turn off the heat. Stir in ⅓ cup parmesan and 1 tablespoon butter (optional) until creamy. Spoon into bowls and top with extra cheese, lemon zest, and fresh herbs.
