Heat 2 tablespoons of olive oil in a pot. Add 2 pints of cherry tomatoes and cook for about 5 minutes, until the skins start to burst.

Stir in 1 chopped onion, 3 grated garlic cloves, 1 teaspoon dried oregano, and ¼ teaspoon red pepper flakes. Cook for 3 minutes, until soft and fragrant.

Add 1 cup rinsed red lentils, 4 cups vegetable broth, ½ teaspoon salt, and some black pepper. Stir and simmer for about 15 minutes, until the lentils are soft. Ladle the soup into bowls. Add lemon juice and zest, then top with olive oil, crumbled feta, Parmesan, or yogurt. Serve with bread on the side.
