Zucchini Fritters are golden, crispy on the outside with tender, veggie-filled centers, showcasing bits of real shredded zucchini and herbs. Rustic and homemade, they’re perfect with a dollop of sour cream or your favorite dip.

Wash the zucchini, dry it, and grate it into a bowl—leave out the ends. Sprinkle salt over the grated zucchini, mix it, and let it sit for 30 minutes so the water comes out.
While waiting, chop the parsley and grate the garlic. After 30 minutes, squeeze the zucchini really well (using your hands or a sieve) to get rid of the extra water. Put it back in the bowl. Add the parsley, eggs, flour, garlic, and grated cheese. Mix everything until it looks like a thick batter.
Heat a little oil in a non-stick pan on low heat. Shape small patties from the mixture and place 2–3 in the pan at a time. Press them down gently and cook for 4–5 minutes per side until golden brown. Take them out, let the oil drain on paper towels, and keep warm while you cook the rest.
